Yummy Stuffed Peppers

Try this yummy(and pretty quick!) recipe that I got from my friend Erin at work...It is delish!

Ingredients:
1 cup quinoa (I can only find this at Clover's here in Columbia)
2 cups chicken broth (optional)
onion & celery, chopped
3 red peppers
1/2 lb. ground turkey
worcestershire sauce
garlic
cheese slices

To prepare Quinoa:
put 2 cups of water or broth in 2 qt. pan with 1 cup quinoa.  Add onion & celery.  Bring to a boil, then simmer for 15 minutes, or until liquid is absorbed.

Meanwhile:
brown turkey and crumble.  Add some garlic & worcestershire sauce.  set aside. 

Needed?
The recipe calls for blanching the peppers for 3 minutes in boiling water. I didn't have time tonight (and they were fine) but have done this in the past.

Finally:
Cut off tops of peppers OR cut in half and stuff with the quinoa and turkey mixture.  top with cheese and bake at 350 for 10 minutes or until cheese is melted.

Sounds delish! And I've been looking for some good quinoa recipes. Might have to make this one :-)
